mangia mondays

i've been a very bad blogger.
it seems like life is just moving WAY too fast
& there are far too many things going on right now.

little miss charlotte has learned to sit up by herself,
wave, pull herself up to a standing position, can easily
navigate around objects while holding on, and can even stand
(very wobbily) on her own for a few seconds at a time.

on top of taking care of my sweet baby,
i've been working out like crazy,
going to school,
participating in a baking competition
(i got 2nd place for in-house... state competition is in march),
and trying to keep it all together.
i've been cooking every single night,
so it's not like i don't cook anymore...
i just don't take pictures.

i promise to be better.
and stay on top of it.
but, i'm not going to lie...
it's HARD.
who knew?

enough of that.
here's the linky for mangia mondays!
please link up all of your goodies!
i love looking at them each week
& get inspired by everything you guys create.
you're amazing... all of you!

mangia mondays 97: black bean brownies

hi, friends!
welcome to
a blog hop i'm *delighted* to host each week with
lisa from shine your light.

sorry i was m.i.a. last week!
school started & life has been a teensy-weensy chaotic.
on friday, i'll be participating in a baking competition through school,
so i've been trying to squeeze in tons of practice time.
i've also started working out
{oy vey!}
& changing up the dowling eating habits!
2013 is the year of change.

now, i still love me some sweets,
so this week i'm sharing
black bean brownies

15.5 oz can black beans, drained & rinsed
1/2 C sugar-free applesauce
2 eggs
1/3 C dark unsweetened cocoa powder
2/3 C stevia (or granulated sugar / sugar substitute)
2 tsp instant espresso
2 tsp vanilla extract
pinch of salt
1/2 C dark chocolate chips

1. preheat oven to 350 f. & prepare an 8"x8" baking dish by spraying with a non-stick cooking spray.

2. in a blender, blend the black beans, applesauce & eggs until smooth. add the cocoa powder, sugar, espresso, vanilla & salt. blend until smooth. pour into baking dish & top with chocolate chips.

3. bake for 25-30 minutes or until the edges start to pull away from the pan. let set for 15 minutes, cut & serve!

these brownies are super yummy...
you wouldn't even know there were black beans in them!
they're also really nice to have around
for a choco-holic like me who is trying to be good!
PLUS, they're gluten free! yay!
