school started & life has been a teensy-weensy chaotic.
on friday, i'll be participating in a baking competition through school,
so i've been trying to squeeze in tons of practice time.
i've also started working out
& changing up the dowling eating habits!
2013 is the year of change.
now, i still love me some sweets,
so this week i'm sharing
black bean brownies
15.5 oz can black beans, drained & rinsed
1/2 C sugar-free applesauce
1/3 C dark unsweetened cocoa powder
2/3 C stevia (or granulated sugar / sugar substitute)
2 tsp instant espresso
2 tsp vanilla extract
pinch of salt
1/2 C dark chocolate chips
1. preheat oven to 350 f. & prepare an 8"x8" baking dish by spraying with a non-stick cooking spray.
2. in a blender, blend the black beans, applesauce & eggs until smooth. add the cocoa powder, sugar, espresso, vanilla & salt. blend until smooth. pour into baking dish & top with chocolate chips.
3. bake for 25-30 minutes or until the edges start to pull away from the pan. let set for 15 minutes, cut & serve!
these brownies are super yummy...
you wouldn't even know there were black beans in them!
they're also really nice to have around
for a choco-holic like me who is trying to be good!
PLUS, they're gluten free! yay!
