mangia mondays 86: pie crust

hi there!

this week i'm sharing
pie crust

{for 2, 9" single crust pies or 1, 9" double crust}
11.75 oz pastry flour
8.25 oz shortening
3 oz water
.25 oz salt

1. combine water & salt. set aside in freezer until it gets icy/slushy.

2. in a large casserole dish, combine flour & shortening with a bowl scraper until it resembles a coarse cornmeal in texture. the color of the flour will turn from white to tan-ish.
**do NOT use your hands/fingers! this will melt the shortening!**

3. once the water is icy, give it a stir to incorporate all of the salt. start by adding half of the water to the flour/shortening mixture & mixing the pie dough by hand. you can always add more, but you can't take it out!  be careful not to overmix as you don't want too much gluten development.
{this is what makes for a flaky pie crust!}

 4. chill in the refrigerator for 1 hour.

5. divide in half & roll out to about 1/8"-1/4" thick. lay in the bottom of your ungreased pie tin. 

6. if making a single-crust pie, trim excess dough from sides, tuck edges under themselves {but not under the lip of the tin!}, & crimp. pre-bake if making a cream pie, or follow normal baking guidelines for baked pies!
 if making a double-crust pie, fill after putting down the first layer, then top with a vented second crust. trim edges of extra dough, tuck edges under themselves & crimp.

i've always been intimidated by pie crust...
but it's seriously SO simple
& it makes such a difference!

mangia mondays 85: cream pies

howdy, ya'll!
welcome to
a blog hop i co-host with

this week i'm sharing
cream pies

pre-made pie shells
{or you can make your own like i did!
i can post the recipe for the most delicious,
easiest pie crust, if you'd like!}

for the basic vanilla filling:
{enough for 1, 9" pie}
1 pt. milk
2 oz. sugar
--
1.5 oz. egg yolks
2 oz. whole eggs
1.25 oz. cornstarch
2 oz. sugar
--
1 oz. butter
.25 oz vanilla extract

1. in a heavy saucepan, dissolve the sugar in the milk and bring just to a boil.

2. with a whisk, beat the egg yolks and whole eggs.

3. sift the starch and sugar into the eggs. beat with the whisk until perfectly smooth.

4. temper the egg mixture by slowly beating in the hot milk in a thin stream.

5. return the mixture to the heat and bring it to a boil, stirring constantly.

6. when the mixture comes to a boil and thicken, remove it from the heat.

7. stir in the butter and vanilla. mix until the butter is melted and completely blended in.

8. pour into baked, cooled pie shells. cool, then keep chilled. if desired, decorate chilled pies with whipped cream using a pastry bag.

variations:
mocha cream:
add .25 oz. coffee extract and 2 oz. melted chocolate when you add the butter.
top with shaved chocolate.

coconut cream:
add 2 oz. toasted, unsweetened coconut to the basic filling.
garnish with extra coconut.

banana cream:
add .5 oz. banana extract with the vanilla.
top with banana slices, then a layer of whipped cream.
garnish with vanilla wafers.



these pies are pretty simple to put together...
and REALLY delicious
{especially the mocha cream! :D}

you can also use this filling for eclairs!

mangia mondays 84: focaccia

heya, friends!
welcome to another rousing rendition of
a blog hop i co-host each week
with the sweet-as-pie
lisa from shine your light.

this week i'm sharing
focaccia

  • 24 oz. bread flour
  • 15 oz. water {85*F}
  • 0.12 oz. instant yeast
  • 0.5 oz salt
  • 1 oz. olive oil

1. combine all ingredients in the bowl of an electric mixer. mix on medium speed for 12 minutes with a dough hook. 

2. place dough in a well-oiled bowl & cover with a damp towel. let rise in a warm place until doubled in size.

3. oil a sheet pan well with olive oil. roll & stretch the dough into a rectangle to fit the pan. cover with the damp towel & let rise until doubled again.

4. preheat oven to 400*F. top the focaccia with olive oil then poke holes heavily into the dough with your fingertips. go crazy with additional toppings!
{i added: basil-infused olive oil, coarse salt & rosemary}

5. bake for 30 minutes or until golden brown.

**when it comes out of the oven & is still hot,
top with extra olive oil & pesto...
seriously, you will thank me. :) **

this bread was superb!
the outside was nice & crusty,
the inside soft & moist!
YUMMMM!

we just wrapped up balloon fiesta here in albuquerque.
if you've never been,
it's seriously one of the most amazing events!
hundreds of hot air balloons launch each day,
the smell of green chile breakfast burritos wafts through the air,
& it's just incredible!

mangia mondays 83: superhero cupcakes

hi there, friends!
welcome to

do you ever have those days
where time just escapes
& you don't know where it went?
yeah, that was definitely last week.
sorry i missed out!
:(

this week,
i made cupcakes for my cousin's
4th birthday.
he totally digs superheroes,
so i made fondant superhero emblems
& put 'em on top of tie-dye cupcakes.
he loved them!



i think they turned out pretty good,
considering it's only my second time working with fondant!

in other, totally unrelated news:
how about some charli pictures?!

















we went to the pumpkin patch
& found the cutest charli-sized pumpkin!



& most recently,
we attended a jimmy buffett party.
i made charlotte an adorable parrot costume
& she was definitely the cutest parrothead!
