mangia mondays 81: crock-pot buffalo chicken sliders

hey there!

this week i'm sharing
crock-pot buffalo chicken sliders

4 pounds boneless, skinless chicken breasts
1 bottle buffalo sauce
{+ more if you want to pour it on top of the finished chicken}
1 packet ranch seasoning
1 package {12 ct} hawaiian sweet rolls, cut in half
6 slices of swiss cheese

1. place the chicken breasts into a crock pot. combine the buffalo sauce & the ranch seasoning & pour over the chicken. cook on high for 6 hours.

2. when the chicken is finished, shred with 2 forks.

3. preheat oven to 375. place the hawaiian rolls on a parchment lined cookie sheet with the cut sides up. {i found this was easy to do if i left the hawaiian rolls in one BIG piece, cut in the center} bake for 7-10 minutes, just to toast the rolls.

4. scoop the chicken on top of the bottom half of the rolls. top with the swiss cheese & place in the oven for a few minutes {until the cheese has melted}.

5. put the tops back on the sliders, slice apart & enjoy!


these sliders would be great for a party
{football food, anyone?}
or just for lunch/dinner like we had them!

mangia mondays 80: butter tea cookies

howdy, folks!
welcome to

first things, first:
we would really appreciate the help!
we know chances of winning are slim,
but how awesome would it be!?
{and you've got to admit,
that is a winning face! :) }


secondly,
how 'bout we share some food?
this week i'm sharing
butter tea cookies

12 oz butter, softened
6 oz granulated sugar
3 oz powdered sugar
2 eggs, slightly beaten
1 tsp vanilla extract
1 pound, 1 oz cake flour
jam of your choice {i used raspberry}

1. preheat oven to 350 f. & line a cookie sheet with parchment paper. 

2. cream together the butter & sugars until fluffy. add the eggs & vanilla & mix well. add the flour & just mix to combine.

3. place the cookie dough into a piping bag fitted with a large star tip {one of those super big guys... unless you want super tiny, itty-bitty cookies!} & pipe the cookies onto the sheet pan. they don't really spread, so you can place them about an inch apart.
**tip: it helps if you secure the parchment paper to the sheet tray by placing a little dollop of cookie dough in each corner & sticking the parchment to it! :) **

4. using a small tip in a piping bag filled with jam {or just a ziploc baggie with a small hole cut in the corner!}, pipe a smidge of jam onto the top of each cookie.

4. bake 8-10 minutes or until slightly golden.

these cookies are seriously addicting.
they're not too sweet...
ugh! i wish i had one {or a dozen!} right now!

mangia mondays 79: coffee cake

hey guys!
welcome to
a blog hop i co-host each week

this week has been awesome.
baby girl started rolling over both ways -
back to tummy & tummy to back.
she's been a lot less cranky
& she's gained so much control over her neck & head.
i know that she's only 2 months old,
but she's shown so much interest in what we're eating
that we've decided to give her a bit of rice cereal...
from a spoon!
she's done amazingly well
& loves eating like a big girl! :)

we've also entered little miss
into a gerber photo search contest through facebook.

anyway,
my bake lab is incredible!
we're producing so much & i'm learning tons!

this week i'm sharing
coffee cake

yield: (2) 8" cakes

for the streusel:
7 oz brown sugar
4 oz walnuts
1 1/2 oz all purpose flour
4 tsp cinnamon
2 oz butter, melted

1. combine the first four ingredients, then add the melted butter. set aside.

for the cake:
10 oz sugar
5 oz butter
1/2 tsp salt
1/2 tsp baking soda
1 TBS baking powder
2 eggs
6 oz sour cream
12 oz milk
15 oz all purpose flour

1. preheat oven to 360 f. prepare 2, 8" tins by greasing well.

2. cream together the sugar, butter, salt, baking soda, & baking powder.

3. blend the eggs & sour cream thoroughly & then add to the creamed mixture until absorbed. scrape down as needed & mix well on low speed.

4. add the milk & flour in three stages, alternating the flour & milk. begin with milk & end with flour.

5. place 1/4 of the batter in the bottoms of 2 prepared 8" tins. sprinkle with 1/4 of the streusel. add another layer of the cake batter to each tin then top with the remaining streusel.

6. bake at 360 f for 20-25 minutes, or until cake springs back when touched in the center.

this cake was DELICIOUS.
so moist & cinnamon-y!
perfect with a morning cup of coffee!

mangia mondays 78: biscuits

hiya!
welcome to

last week was a nightmare!
linky tools wasn't working properly for me,
school was starting,
& my sweet little baby has started teething.
:(
she's only 2 1/2 months!!
we had just started getting into a routine
when all of a sudden
2 little, tiny bottom teeth started
making their debut.
any tips? tricks?
has anyone else had an early teether?
heeeelp!

anyway,
school is awesome.
i am IN LOVE with my bake lab.
i've been patiently waiting for this particular lab...
& it was well worth it.

in the first week,
i've made TWO things that have intimidated me:
- pie
{the crusts always make me nervous...
how do you keep the bottom from getting soggy!?}
- biscuits
{i don't know why...
they're easy!}

so, i'm going to share those lovely biscuits
with all of you!

biscuits

20 oz. all-purpose flour
.375 oz salt
1 oz sugar
1.25 oz baking powder
8 oz butter, room temperature, cut into small cubes
13 oz milk
egg wash {1 egg & 2 TBS milk}

1. preheat oven to 400 f. line a baking sheet with parchment paper.

2. in a large bowl, sift together the flours, salt, sugar, and baking powder.

3. add the butter to the flour mixture & cut it in using a pastry scraper.
{you don't want to use your hands because you'll melt the butter!}
you want to make sure there aren't any huge chunks, but you also don't want the butter to totally disappear!

4. add the milk to the flour & butter mixture. use your pastry scraper to combine.
{it'll be a sticky, goopy mess.}

5. turn the mixture onto a well-floured surface. sprinkle some flour over the dough & start kneading lightly.
you want to slightly develop the gluten, but  you don't want to over work the dough at all. once it's come together, fold the dough over itself 2-3 times, making a square-ish shape.

6. roll the dough 1/2"-1" thick. use a biscuit cutter to make your cuts. make sure you just press down firmly once & don't wriggle or twist the cutter... that seals the biscuit! you can re-shape the dough once more & still get nice looking biscuits, but any more than that & they start looking a little wonky.

7. place on the baking sheet 2" apart. brush just the tops with egg wash & bake 15-20 minutes or until golden brown.


these biscuits are delicious & flaky...
perfect for biscuits & gravy!!

i don't think i'll ever buy refrigerated biscuits again!
the directions may sound intimidating,
but they are quite simple & come together rather quickly.

i know that all of the ingredients are measured by weight,
but the first thing we learned was:
in baking, you should always measure your ingredients
by weight because it is more accurate.
invest in a digital scale
{if you don't already have one!}.
the scale makes measuring so fast & easy!
