mangia mondays 64: red chile onion strings

howdy, ya'll!
welcome to
a blog hop i co-host each week

since i've been put on bed rest,
it's been up to the hubs to do the cooking.
i really wanted burgers
{& hubs can work the grill like nobody's business!},
but wanted something "special."
so, to go with the delicious burgers hubs was making,
i whipped up these

red chile onion strings

vegetable oil, for frying
1 red onion, cut in 1/2 & thinly sliced
2 C all-purpose flour
1 TBS chipotle chile powder
1 TBS ancho chile powder
1 TBS garlic powder
1 tsp cayenne pepper
2 tsp salt
2 eggs, beaten

1. heat oil in a large pot over medium.

2. in a large bowl, combine flour, chile powders, garlic powder, cayenne & salt. dredge onion slices in the flour mixture & sift to remove excess.

3. dunk the onion strings into the beaten eggs & return to the flour mixture. coat all of the onion strings well.

4. fry onion strings in batches until golden brown & crisp. serve immediately.

these are REALLY good on a burger...
but they're also exceptional as a side dish
with some ranch dressing...
yummmmm! :)
or, how about on top of that green bean casserole?

baby bump: week 35


how far along?
35 weeks. we're so close!

baby size: 
last week, we found out that charlotte is
a chubster coming in at 6.5 pounds!
holy guacamole.

total weight gain:
33 pounds.
talk about chubster!
this baby needs to come out soon!

maternity clothes? 
living in pj's, maxi dresses, & flowy tops.
the ONE good thing about bedrest?
i don't have to get dressed!
yay jammies!

stretch marks?
not yet.

sleep:
i've actually been sleeping pretty well.
i get up once to use the restroom,
but have been sleeping pretty soundly otherwise. :)

best moment this week:
getting to see my mommy.
she flew out for the shower
{which i couldn't end up having... darn you bedrest!! :'( }
last friday & left on monday.
it was so wonderful to see her & show her the nursery.
also, charlotte put on a really good show for her at our ultrasound.
it was awesome. :D

miss anything?
being able to DO things.
it's really easy to be lazy when someone isn't telling
you that you have to.
i also miss being able to see my feet,
wearing shoes other than flip-flops,
being able to get comfortable...
you know, the things "normal" people take for granted. :P

movement:
she moves all the time.
we've all decided that she's having dance parties.
it's so funny when my tummy is off-center & you
can obviously see where her little tush is.
i just can't wait to see her! 

food cravings:
thanksgiving dinner.
for realsies.
and also, pork belly buns from the japanese restaurant down the street.
annnnndddd ice cream.
yup.

anything making you queasy or sick:
nope.

gender:
sweet little girl

labor signs:
i've had a few sporadic braxton hicks contractions,
but that's it.

symptoms:
my back hurts all the time,
my feet are swollen
{it's even hard to get my flip-flops on sometimes!},
you know, the norm.
when i was at the doctor last week,
she said that my cervix was thinning...
so that's something!

belly button in or out?
it pops out when i laugh...
which makes me laugh even more!

wedding rings on or off?
off... :(
that makes me really sad.
i blame it on the warm weather.
{NOT the 33 pounds. ;) }

mood:
happy & really anxious.
i'm so ready to have this little baby...
but nervous at the same time. eek! 

looking forward to:
not being on bedrest! :D

mangia mondays 63

hi, everyone.
welcome to

so, i was supposed to have my baby shower sunday.
supposed to.
friday afternoon, my blood pressure spiked
ridiculously high... & i was put on bed rest.
lame sauce.
everything was 100% fine when i went back to the
hospital on saturday to get checked out,
but i'm still on that darn bed rest.
so, i don't have anything to share this week. :(
& i'm a little down in the dumps.

i've found bed rest
{&, mind you, i've only been on bed rest for 2 days!}
to be extremely uncomfortable & tiring!
what do i do!?
ergh.

anyway,
i can't wait to see what you guys link up this week -
it'll be a wonderful smorgasbord for my eyes
& ever-expanding tummy!

mangia mondays 62: cookie dough cupcakes

hi everybody!
welcome to

how was your mother's day?
mine was wonderful...
the hubs was so sweet & surprised me with
flowers & breakfast in bed.
he's the best, & i'm so lucky to have him!
then, we had his family over for lunch
& to celebrate with us!
it was such a great day...
i don't think i could be any happier!
{well, maybe if little charlotte were here!}

annnnyway,
another cupcake recipe i tested out for
my baby shower next weekend:

chocolate chip cookie dough cupcakes

for the cookie dough:
2 sticks softened butter
3/4 C sugar
3/4 C brown sugar
4 TBS milk
1 TBS vanilla
2 1/2 C all purpose flour
1/4 tsp salt
1 C mini chocolate chips

for the cupcakes:
1 box french vanilla cake mix
1 small pkg jello instant white chocolate pudding mix
1 C sour cream
1 C vegetable oil
4 eggs, beaten
1/2 C milk
1 tsp vanilla

for the frosting:
3 sticks softened butter
3/4 C light brown sugar, packed
3 1/2 C powdered sugar
1/2 tsp salt
2 TBS milk
1 tsp vanilla extract

to make the cookie dough:

1. combine the butter & sugars in a mixing bowl & cream on medium-high speed until light & fluffy, about 2 minutes. beat in milk & vanilla until incorporated & smooth. beat in the flour & salt until just combined. stir in the chocolate chips.

2. using a 1 TBS measure, shape the dough into balls or tubes. freeze on a parchment lined baking sheet overnight.

to make the cupcakes:

1. in a very large bowl, mix together everything except chocolate chips until well combined {batter will be thick}.

2. fill the prepared cupcake liners 2/3 full with the cupcake batter. place a frozen cookie dough ball on the top center of each cupcake.

3. bake at 350 for 18-20 mins.

to make the frosting:

1. combine the butter & brown sugar in a mixing bowl & cream on medium-high speed until light & fluffy. beat in the powdered sugar until smooth. beat in the salt, milk, & vanilla extract until smooth & combined.

2. frost the cupcakes & sprinkle with mini chocolate chips!



okay.
shut the front door.
these are amazing.
the frosting TASTES like cookie dough...
there's cookie dough in the middle of the cupcake...
they're super moist, light, delicious, sweet...
aaaah! everything i want in a cupcake!

mangia mondays 61: caramel toffee latte cupcakes

hi friends!
welcome to

i've been testing out cupcake recipes to make
for my baby shower in a couple of weeks.
these cupcakes from kevin & amanda are truly incredible.
they're decadent & sweet & delicious...
& maybe some of my favorite cupcakes ever.

caramel toffee latte cupcakes
recipe via kevin & amanda


for cupcakes:
1 box devil’s food cake mix
1 small pkg jello instant chocolate pudding mix
1 C sour cream
1 C vegetable oil
4 eggs, beaten
1/2 C milk
1 tsp vanilla
2 C mini chocolate chips

1. in a very large bowl, mix together everything except chocolate chips until well combined {batter will be thick}. stir in the chocolate chips.

for buttercream:
5.5 oz (1/2 bag) kraft caramel bits
1 TBS instant espresso
1/4 C heavy cream
1/2 C butter, softened
3 C powdered sugar
2 TBS milk
2 tsp vanilla extract

1. stir instant espresso into heavy cream to dissolve.

2. over medium-low heat, cook caramel bits & heavy cream in a heavy-bottomed saucepan for 3-5 minutes until the caramel bits are completely melted, stirring constantly. set aside to cool.
**cool well before mixing with other ingredients. i think if you refrigerate the mixture for 5 minutes, that would work {you just don't want it to harden up}, otherwise, your buttercream will be too runny & won't hold up to piping.**

3. place the butter, sugar, milk, espresso-caramel mixture, & vanilla in a large mixing bowl. beat on medium speed until smooth & creamy, about 3-5 minutes.

chocolate drizzle:
2/3 C milk chocolate chips
2 TBS heavy cream
1/4 C powdered sugar, sifted
4-5 TBS water, warm

1. place chocolate & heavy cream in a glass or heat-proof bowl set over simmering water. let stand for 2-3 minutes without stirring to allow chocolate to melt. whisk to combine.

2. add powdered sugar & whisk until smooth. 

3. add water 1 TBS at a time, whisking thoroughly after each addition until pouring consistency is reached.

assembly:

1. preheat oven to 350 f.

2. line muffin tins with cupcake liners. fill each liner 2/3 full with cupcake batter & bake for 18-22 minutes.

3. pipe frosting onto cupcakes & freeze for 10 minutes. drizzle pouring sauce onto cupcakes & top with crushed heath bars.


the buttercream is sweet & espresso-y,
the cupcake is moist & packed full of chocolate, but still light...
i could eat 50 of them
{& then keel over because they truly are super-sweet}.

baby bump: week 32


how far along:
32 weeks - but i really feel like i'm 33.
they went back & forth with my due date a lot
when we first found out i was pregnant.
either way, we're SO close!

baby size:
she's about the size of a pineapple!
5 pounds & 17 inches.

total weight gain/loss:
22 pounds.

maternity clothes?
 since i now only have to get dressed if i decide to go somewhere,
i've been living in pj's... & i LOVE it!
otherwise, same old maternity jeans, dresses, & flowy tops.

stretch marks?
not yet.

sleep:
i fall asleep on my left side & stay that way until i
can't take it anymore. it gets to be painful, but rolling over is
quite uncomfortable, too.
thank goodness school is done, because i'm giving up on
this whole "sleep" thing.

best moment this week:
i got to see her taking "practice breaths" today.
last week, we saw that she has quite a bit of hair
& (ready for this) fat rolls!
she's so cute.

miss anything? 
just the norms...
coffee, tuna, margaritas.
and getting a good night's sleep...
that won't happen again for awhile.

movement: 
i love her little hiccups
& watching her drag a foot or hand from one
side of my tummy to the other.

food cravings:
milk, cereal, doughnuts, watermelon,
pineapple, granny smith apples, pizza...
ummm... food? hahaha!

anything making you queasy/sick:
nope!

have you started to show yet:
yes indeed!

gender:
baby girl!

labor signs:
no

belly button in or out?
still an innie.
i had a really deep belly button to begin with.
it's weird to see it shrink like this!

wedding rings on or off?
i can't get my wedding band on, so i've just
been sporting my engagement ring.

mood?
happy all the time!
i don't really have anything to be upset about!

looking forward to:
seeing my mom & my baby shower in a couple of weeks.
yay!
