howdy, ya'll!

this week,
i'm sharing one of the easiest meals ever:
crockpot fiesta chicken
8 boneless, skinless chicken breasts
{i used frozen!}
8 oz cream cheese
16 oz salsa
{i used green chile salsa}
1, 15 oz can black beans
12 oz chopped onions
{i used a bag of the "works-already-done-for-you" frozen onions!}
1, 15 oz can whole kernel corn
dash of ancho chile powder
dash of chipotle chile powder
1. put everything in the crockpot. cook on low for 8 hours. DONE!
{seriously, i loved how easy this was!}
we served ours over wild rice
& it was AWESOME.
the leftover "sauce" would be great over broccoli,
with potatoes, hamburger meat & cheese...
or with some bread for dipping
{i know from experience... don't judge}.
