mangia mondays 84: focaccia

heya, friends!
welcome to another rousing rendition of
a blog hop i co-host each week
with the sweet-as-pie

this week i'm sharing

  • 24 oz. bread flour
  • 15 oz. water {85*F}
  • 0.12 oz. instant yeast
  • 0.5 oz salt
  • 1 oz. olive oil

1. combine all ingredients in the bowl of an electric mixer. mix on medium speed for 12 minutes with a dough hook. 

2. place dough in a well-oiled bowl & cover with a damp towel. let rise in a warm place until doubled in size.

3. oil a sheet pan well with olive oil. roll & stretch the dough into a rectangle to fit the pan. cover with the damp towel & let rise until doubled again.

4. preheat oven to 400*F. top the focaccia with olive oil then poke holes heavily into the dough with your fingertips. go crazy with additional toppings!
{i added: basil-infused olive oil, coarse salt & rosemary}

5. bake for 30 minutes or until golden brown.

**when it comes out of the oven & is still hot,
top with extra olive oil & pesto...
seriously, you will thank me. :) **

this bread was superb!
the outside was nice & crusty,
the inside soft & moist!

and now, a little charli...
& balloons!

we just wrapped up balloon fiesta here in albuquerque.

the smell of green chile breakfast burritos wafts through the air,
& it's just incredible!

  2. Wow Kristin! I have heard about this event and would love to see it in person some day. It must be absolutely amazing with that big blue sky behind all those beautiful balloons (and the sweetest baby ever in zebra print!! Have mercy!)

    1. lisa, it's truly an event that can't be missed! albuquerque has some of the best weather year-round & makes for a beautiful backdrop for the balloons! come visit next year!! :D
