mangia mondays 67: apple oatmeal breakfast cookies

howdy, ya'll!
welcome to
a foodie blog hop i co-host each week
with my absolutely wonderful blog-friend
lisa from shine your light

welp, still no charlotte!
we're anxiously awaiting her arrival...
so keep your fingers crossed that she'll be here
sometime this week!
mama can't handle the swollen feet & ankles
for very much longer.

in the mean time,
i've kept myself busy by making

apple oatmeal breakfast cookies

1 C vegetable shortening
3/4 C brown sugar
1/2 C granulated sugar
2 eggs
1 tsp vanilla extract
1 1/2 C flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 C oats
1 C apple, chopped

1. preheat oven to 350 f. line a baking sheet with parchment paper.

2. in the bowl of an electric mixer, cream together shortening & sugars until smooth. add eggs & vanilla & beat until combined.

3. in a separate bowl, combine flour, cinnamon, baking soda & salt. gradually add this mixture to the sugar mixture & mix until well combined. add oats & stir in the apple chunks.

4. drop by rounded tablespoons onto the lined baking sheet & bake for 10-12 minutes, or until golden brown.

i love these cookies -
they're quick, simple, delicious,
& especially easy to grab & eat on the go.
i've also decided that these would be amazing
as part of an ice cream sandwich.
YUMMMM!
