mama can't handle the swollen feet & ankles
for very much longer.
in the mean time,
i've kept myself busy by making
apple oatmeal breakfast cookies
1 C vegetable shortening
3/4 C brown sugar
1/2 C granulated sugar
2 eggs
1 tsp vanilla extract
1 1/2 C flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
3 C oats
1 C apple, chopped
1. preheat oven to 350 f. line a baking sheet with parchment paper.
2. in the bowl of an electric mixer, cream together shortening & sugars until smooth. add eggs & vanilla & beat until combined.
3. in a separate bowl, combine flour, cinnamon, baking soda & salt. gradually add this mixture to the sugar mixture & mix until well combined. add oats & stir in the apple chunks.
4. drop by rounded tablespoons onto the lined baking sheet & bake for 10-12 minutes, or until golden brown.
i love these cookies -
they're quick, simple, delicious,
& especially easy to grab & eat on the go.
i've also decided that these would be amazing
as part of an ice cream sandwich.
