howdy, ya'll!

since i've been put on bed rest,
it's been up to the hubs to do the cooking.
i really wanted burgers
{& hubs can work the grill like nobody's business!},
but wanted something "special."
so, to go with the delicious burgers hubs was making,
i whipped up these
red chile onion strings
vegetable oil, for frying
1 red onion, cut in 1/2 & thinly sliced
2 C all-purpose flour
1 TBS chipotle chile powder
1 TBS ancho chile powder
1 TBS garlic powder
1 tsp cayenne pepper
2 tsp salt
2 eggs, beaten
1. heat oil in a large pot over medium.
2. in a large bowl, combine flour, chile powders, garlic powder, cayenne & salt. dredge onion slices in the flour mixture & sift to remove excess.
3. dunk the onion strings into the beaten eggs & return to the flour mixture. coat all of the onion strings well.
4. fry onion strings in batches until golden brown & crisp. serve immediately.

these are REALLY good on a burger...
but they're also exceptional as a side dish
with some ranch dressing...
yummmmm! :)
