mangia mondays 62: cookie dough cupcakes

hi everybody!
welcome to

how was your mother's day?
mine was wonderful...
the hubs was so sweet & surprised me with
flowers & breakfast in bed.
he's the best, & i'm so lucky to have him!
then, we had his family over for lunch
& to celebrate with us!
it was such a great day...
i don't think i could be any happier!
{well, maybe if little charlotte were here!}

annnnyway,
another cupcake recipe i tested out for
my baby shower next weekend:

chocolate chip cookie dough cupcakes

for the cookie dough:
2 sticks softened butter
3/4 C sugar
3/4 C brown sugar
4 TBS milk
1 TBS vanilla
2 1/2 C all purpose flour
1/4 tsp salt
1 C mini chocolate chips

for the cupcakes:
1 box french vanilla cake mix
1 small pkg jello instant white chocolate pudding mix
1 C sour cream
1 C vegetable oil
4 eggs, beaten
1/2 C milk
1 tsp vanilla

for the frosting:
3 sticks softened butter
3/4 C light brown sugar, packed
3 1/2 C powdered sugar
1/2 tsp salt
2 TBS milk
1 tsp vanilla extract

to make the cookie dough:

1. combine the butter & sugars in a mixing bowl & cream on medium-high speed until light & fluffy, about 2 minutes. beat in milk & vanilla until incorporated & smooth. beat in the flour & salt until just combined. stir in the chocolate chips.

2. using a 1 TBS measure, shape the dough into balls or tubes. freeze on a parchment lined baking sheet overnight.

to make the cupcakes:

1. in a very large bowl, mix together everything except chocolate chips until well combined {batter will be thick}.

2. fill the prepared cupcake liners 2/3 full with the cupcake batter. place a frozen cookie dough ball on the top center of each cupcake.

3. bake at 350 for 18-20 mins.

to make the frosting:

1. combine the butter & brown sugar in a mixing bowl & cream on medium-high speed until light & fluffy. beat in the powdered sugar until smooth. beat in the salt, milk, & vanilla extract until smooth & combined.

2. frost the cupcakes & sprinkle with mini chocolate chips!



okay.
shut the front door.
these are amazing.
the frosting TASTES like cookie dough...
there's cookie dough in the middle of the cupcake...
they're super moist, light, delicious, sweet...
aaaah! everything i want in a cupcake!
