mangia mondays 46: shortbread cookies

hiya, readers!

this week,
i had a hankerin' for
shortbread cookies


3/4 lb unsalted butter, at room temperature
1 C sugar, plus extra for sprinkling
{i used turbinado sugar for sprinkling}
1 tsp vanilla extract
3 1/2 C all-purpose flour
1/4 tsp salt

1. preheat oven to 325 f.

2. in the bowl of an electric mixer fitted with a paddle attachment, mix together the butter & sugar until they are just combined. add the vanilla.

3. in another bowl, sift together the flour & salt, then add them to the butter/sugar mixture. mix on low speed  until the dough starts to come together. dump onto a surface dusted with flour & shape into a flat disk. wrap in plastic & chill for 30 minutes.

4. roll the dough 1/2 inch thick & cut with cookie cutter of your choice. {i found that cookie cutters with open tops are easiest since the dough tended to break if a had to shake a cookie cutter to get the dough out.} 

5. place the cookies on an un-greased baking sheet & sprinkle with sugar. bake until the edges begin to brown, about 20 minutes. allow to cool to room temperature.


what i LOVE about shortbread is that you can do SO much with it.
i opted to dip half of mine in a lemon glaze & add some colorful sprinkles!
buuuuut...
you can make a savory variety to serve with cheese,
dip in chocolate,
add nuts,
go wild! :)
