this week, i'm sharing
gingersnap & pumpkin pie

| {sorry for the picture! my normal camera is being fixed right now... it suffered water damage! :'( } |
{this recipe makes 2 pies!}
1 LB gingersnaps, crushed finely {for crust}
12 TBS unsalted butter, melted
3.4 oz package instant vanilla pudding
2 C cold milk
30 oz pumpkin pie filling
8 oz cream cheese, softened
cinnamon, to taste
nutmeg, to taste
whipped topping
gingersnaps {crushed for garnish} {optional}
1. combine crushed gingersnaps & melted butter. divide evenly between two pie plates & press firmly to form a crust.
2. beat instant vanilla pudding with 2 C cold milk for 5 minutes, or until it thickens up. add pumpkin pie filling, cream cheese, cinnamon & nutmeg. beat until combined & creamy.
3. pour pumpkin mixture over both crusts.
4. top each pie with whipped topping & crushed gingersnaps. refrigerate & serve.
it seriously couldn't get any easier than this!

ReplyDeleteLOL Hey, lil' cupcake is due in 2012 not, 2011! lol Easy mistake but I wanted to let you know what you put. I love that picture, too. Sweet little relaxed cupcake.
