mangia mondays 41: gingersnap & pumpkin pie

howdy, friends!

last week,
i shared that the hubs & i are expecting our first little one
{aka, "cupcake"}.
{i love love LOVE this ultrasound picture... little cupcake is just hangin' out in mommy's tummy!}
i'm officially 13 weeks & due 6/28/2012!
hubs & i can't wait...
& the time is already just flying by!

this week, i'm sharing
gingersnap & pumpkin pie

{sorry for the picture! my normal camera is being fixed right now...
it suffered water damage! :'( }
{this recipe makes 2 pies!}
1 LB gingersnaps, crushed finely {for crust}
12 TBS unsalted butter, melted
3.4 oz package instant vanilla pudding
2 C cold milk
30 oz pumpkin pie filling
8 oz cream cheese, softened
cinnamon, to taste
nutmeg, to taste
whipped topping
gingersnaps {crushed for garnish} {optional}

1. combine crushed gingersnaps & melted butter. divide evenly between two pie plates & press firmly to form a crust.

2. beat instant vanilla pudding with 2 C cold milk for 5 minutes, or until it thickens up. add pumpkin pie filling, cream cheese, cinnamon & nutmeg. beat until combined & creamy.

3. pour pumpkin mixture over both crusts.

4. top each pie with whipped topping & crushed gingersnaps. refrigerate & serve.

it seriously couldn't get any easier than this!
