have you discovered the wonderful-ness that is the tomatillo?
no?
well... you definitely should!
you can start by trying this salsa:
tomatillo salsa verde
1 lb tomatillos, husked, rinsed & diced
1/2 red onion, chopped
1 tsp minced garlic
2 poblano peppers, chopped
2 TBS chopped cilantro
1 TBS chopped fresh oregano
1/2 tsp ground cumin
1 1/2 tsp salt
1. combine all ingredients in a food processor & pulse until smooth-ish. :)
2. transfer to a saucepan. bring to a boil over high heat, then reduce to medium-low & simmer 15-20 minutes.
this salsa is awesome.
very fresh tasting & perfect for summer parties
or on fajitas {like i'll show you tomorrow!}.

ReplyDeletei bought tomatillos a few weeks ago, and not knowing what on earth to do with them, ended up cutting them into a salad, wasn't the biggest fan... I think this would have been a smart way to use them though!!!

ReplyDeleteFunny, I was just looking at salsa verde at the grocery store. It seems like some of the green salsas were labeled HOT so I wasn't sure if the salsa verde was, too? From your recipe, it sounds like it is quite mild.
ReplyDeletethis recipe is extremely mild - i'm sure you could amp it up {if you wanted to} by subbing the poblanos for a more intense pepper {perhaps a serrano?}.
