howdy, partners,

an amazing blog hop i co-host each week with the always incredible

something you should know:
i love summer.
i mean, reeeeeally love it.
i love the heat
& the sunshine
& ballgames
& barbecues
& fireworks
& popsicles
& lazy days
& swimming pools
& camping...
i just love it!

summer food is some of the best, too!
this week, i'm bringing you:

chicago dogs & beer-battered onion rings

chicago dogs
all-beef hot dogs {barbecued for extra delicious-ness}
buns {traditional is a poppy seed bun, we used whole grain}
yellow mustard
sweet pickle relish
diced onion
diced tomato
pepperoncini peppers {usually left whole, we sliced to make for easier consumption}
dill pickle {a spear is usually used, we had dill pickle chips on hand}
dash of celery salt

the most important thing about a chicago dog:

beer-battered onion rings
vegetable oil, for frying
2 vidalia onions, peeled & sliced into rings {thicker are better.. 1/4"-1/2"}
1 C all purpose flour
1 C beer {or carbonated water}
1 TBS creole seasoning

1. in a large, deep skillet, heat oil to 365 f.

2. in a medium bowl, combine flour, beer & creole seasoning. mix until smooth. dredge onion slices in the batter, until evenly coated. deep fry in the hot oil until golden brown. drain on paper towels.

doesn't that just make you FEEL like summer is here?

  1. Glad to see you added the celery salt and held the ketchup. :)
    And those onion rings look amazing!

  2. Oh my goodness I would sell a kidney for those onion rings. I mean really, they look WONDERFUL!!

  3. Kristin, you are making me homesick. Being a Chicago girl (transplanted here in Cincinnati), I miss a good hotdog (and good pizza). Thanks for reminding me :) Just kidding, those look great. When I visit my family, I always stock up on Vienna Beef hot dogs. Mmmmmm.

  4. I have LOTS of great memories of going to a place called Parky's Hot Dogs in Forest Park, IL (Chicago suburb) when my sister lived there! And onion rings are my absolute fave, too. They beat the pants off of french fries.

    Thanks for hosting, Kristen! Have a great week.

  5. Girl! Those onion rings look AWEsome!

  6. Those onion rings look great!! I just beer battered (using ginger ale) some stuffed peppers a couple of weeks ago, for the first time and it was fun and delicious.

  7. Oh those onion rings look perfect! I am really into fried food at the moment. Although, I've never tasted onion rings. I would love to ! They are very American.

  8. Thanks for hosting! Those beer battered onion rings look fantastic!

  9. thanks Kristin for hosting. Have a fabulous Monday! mangia, mangia!

  10. Linking up Homemade Baklava for this week!
    Thanks again for hosting!

  11. Yummy!! Thank you for sharing and hosting!
    Wonderful as always!!

  12. Everything looks so good! I love everything about summer too - especially my break from work! Thanks for hosting :-)

  13. Those Onion Rings look to die for. :)

  14. I gotta admit, I can't eat a hot dog without chili smothered over the top. Maybe it's a southern thing though. :) The Sonic sells other style hotdogs like yours. They do look good, but I can't bring myself to sway from (my) tradition.

    Those onion rings look DELISH though!

    Thanks for hosting the party for us.

  15. ohhhhhhhh those onion rings. definately on the list to try!
