Have you guys ever had gooey butter cookies… you know, the ones that are impossible to mess up because they’re made from a box mix? I feel a little embarrassed saying this, but I think they’re fantastic. Sometimes, you just can’t go wrong with a box mix! But, I feel like I can’t be proud of a recipe if there’s a box mix involved, so I decided to give these cookies a little makeover and make them authentic and not so processed. I was a little hesitant because I didn’t have the box mix to rely on, but my worries were put to rest once these little guys came out of the oven looking all fluffy and slightly gooey. You guys have to make these!! Like, right now.
Another positive thing about these is that they’re super versatile. You can add chocolate, an extract, chocolate chips… whatever you want! This is just a basic recipe and can be easily adapted to your taste buds!
Gooey Butter Cookies from Scratch
Idea from: Food.com
Ingredients· 2 cups sugar
· 2-½ cups All-purpose Flour
· 2 teaspoons Baking Powder
· ½ teaspoons Salt
· 8 ounces cream cheese, softened
· 1/2 cup butter, softened
· 1 egg
· 1/2 teaspoon vanilla
· Powdered sugar for rolling
Directions
1. Cream together cream cheese and butter.
3. Add egg and vanilla to cream cheese and butter mixture, then add “cake mix”.

4. Refrigerate for at least 1 hour or until cookie dough is firm.
5. Roll in 1 inch balls and then roll in confectioner's sugar.
6. Preheat oven to 350 degrees.
7. Bake cookies on ungreased cookie sheet for 10-13 minutes.
8. Wait a minute or two before removing cookies to cooling racks.
