i love summer...
love love love love love it.
with summer comes a lot of salads -
& this one is scrumptious.
baby greens salad with bacon & roasted garlic vinaigrette
{for 4}
8 slices of thick cut, applewood smoked bacon, chopped
8 oz. baby greens, rinsed
roasted garlic vinaigrette {recipe follows}
salt & pepper
3 plum tomatoes, sliced
thinly shaved asiago cheese, for garnish
1. place the baby greens in a large bowl, add 1/4 C of the vinaigrette, season with salt & pepper, & toss to coat. place the tomatoes in a bowl, add a few tablespoons of the dressing, season with salt & pepper, & toss to coat.
2. divide the baby greens among 4 large plates, arrange tomatoes & bacon as desired. garnish with shaved cheese & drizzle with vinaigrette.
roasted garlic vinaigrette
{makes approx. 1 C}
8 cloves roasted garlic, peeled
3 Tbs red wine vinegar
1 Tbs chopped red onion
1 Tbs honey
1 Tbs fresh lime juice
salt & pepper
1/2 C olive oil
1. combine the garlic, vinegar, onion, honey, lime juice, & salt & pepper to taste in a blender & blend until smooth. with the motor running, slowly add the oil & blend until emulsified.
we enjoyed this salad with the
& oh.my.gosh, was it good!
