stuffed chicken breasts

hello, friends!
it was most certainly time for something on the lighter side.
stuffed chicken breasts are great -
they stretch the dollar,
{you can feed 6 with 3 chicken breasts!}
have ingredients that are easily interchangeable,
& are sooo tasty!

stuffed chicken breasts

3 chicken breasts, butterflied, cut in half & pounded thin
{you should have 6 thin pieces!}
12 oz. mild italian turkey sausage
2 Tbs extra virgin olive oil
1 T garlic, minced
1 shallot, diced
6 oz. baby spinach, rinsed
pinch of cayenne pepper
salt & pepper, to taste
1/4 C parmesan cheese, grated
7-10 basil leaves, chiffonade cut + more for garnish
1 C mozzarella cheese, shredded

1. preheat grill to 425 f.

2. in a large skillet, cook sausage in olive oil over medium-high heat. when cooked through, remove from pan & set aside. add garlic & shallot to pan with oil. saute until shallots are translucent. add spinach & toss to coat with oil, shallots & garlic. add cayenne, salt & pepper.

3. when the spinach is wilted, add cooked sausage & remove from heat. add parmesan & basil. mix well.

4. lay a flattened 1/2 chicken breast down. top with 1 Tbs of mozzarella and {about} 2 Tbs of the sausage mixture. roll up {like a burrito!}. repeat with the remaining chicken & sausage mixture.

5. place on grill with the rolled end on the bottom. grill 8-11 minutes, until cooked through.

we served ours with lemon balsamic asparagus...
my favorite side dish ever.
ever.ever.ever.ever.

this chicken is SO good!
i will most certainly be making it again.
