mangia mondays 5: banana crumb muffins

banana crumb muffins

1 1/2 C all-purpose flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas, mashed
3/4 C sugar
1 egg, lightly beaten
1/3 C butter, melted

.....crumb topping.....

1/3 C brown sugar
2 Tbs all-purpose flour
1/8 tsp cinnamon
1 Tbs butter

1. preheat oven to 375 f & lightly grease muffin pan, or line with paper liners.

2. in a large bowl, mix together flour, baking soda, baking powder, & salt. in another bowl, beat together bananas, sugar, egg, & melted butter. stir the banana mixture into the flour mixture just until moistened. spoon batter into prepared muffin tin, filling 2/3 full.

3. in a small bowl, mix together brown sugar, flour, & cinnamon. cut in butter until mixture resembles coarse cornmeal. sprinkle topping over muffins.

4. bake 18-20 minutes, until a toothpick inserted into the center of a muffin comes out clean.

these muffins are
ahhhh-maaaaaaaa-zing!!
for real...
i doubled the batch so we could freeze them & enjoy them for breakfast next week!

... i also may have slipped chocolate chips into a few:

they remind me of my favorite muffins from trader joe's...
but the size is a lot more manageable!
