fabulous fish tacos

howdy, friends!
now... one thing you should know:
the hubs & i do not particularly care for fish.
but, the other day
i had a fever...
& the only cure was more cowbell... err...
fish tacos.

my beloved BFC
{barefoot contessa ;)}
had a recipe for phenomenal looking fish tacos.
but i wanted to add my own twist
with guacamole
& jalapeño coleslaw.

so, here we go:

fish tacos

{for 4 fish tacos}

fish:
1/2 lb. tilapia filets
1 1/2 c all purpose flour, separated
1 c dark beer
1 Tbs chipotle chili powder
1 tsp onion powder
1 tsp garlic salt
1 tsp lemon pepper
vegetable oil, for frying

1. heat oil to 325 f.

2. coat tilapia filets in flour.

3. in a large bowl, combine 1 c flour, beer, chili powder, onion powder, garlic salt & lemon pepper. coat floured filets in the beer batter.
*if you don't want to use beer, use sparkling water instead.

4. fry until golden brown.
*if you find your fish not cooking all the way through, heat oven to 350 f, place fish on a wire rack on top of a baking sheet, & bake 10 minutes, or until fish is cooked all the way through.

jalapeño coleslaw:
1 small head of red cabbage, thinly sliced
1 jalapeño, diced small
1/2 red onion, thinly sliced
1 yellow bell pepper, diced small
zest & juice of 1 lime
2-3 Tbs red wine vinegar

1. in a large bowl, combine all ingredients.
*the longer you let this sit, the better it will taste! i would recommend making it a day ahead.

guacamole:
1 avocado, diced
1/2 tomato, diced
1/4 onion, diced
juice of 1/2 a lime
1/2 tsp minced garlic
salt & pepper, to taste

1. combine avocado, tomato, onion, lime juice & garlic in a bowl. smoosh with a fork.

2. taste before you add salt & pepper... some people don't put it in their guacamole; i find it necessary.

other ingredients:
tortillas
{we like flour}
chipotle mayo

1. on a tortilla, spread a thin layer of chipotle mayo & guacamole.

2. top with jalapeño coleslaw.

3. place fried fish on coleslaw.

4. fold & enjoy!

for not liking fish,
this recipe has quickly become a staple in our house.
it's so good...
& reminds me so much of the beach
& california.

  1. Seriously do you laugh hysterically when taking those dowlings, out pictures? I LOVE them - they always make me smile a big huge crazy goofy smile! This one might be my favorite! The fish tacos -........-yummmmmm. My kids might even eat fish this way!
