blt pasta

just like yesterday,
we're looking for ways to use the obscene amount of bacon we got from costco.

i got this recipe from
she even won a recent williams sonoma contest with this one pot gem!

one pot blt pasta
adapted from it's a keeper

12 slices of bacon, cooked, crumbled & divided
1 Tbs bacon drippings
4 C chicken broth
1-2 lg tomatoes, diced
1 shallot, chopped
4 cloves garlic, minced
1/2 tsp crushed red pepper flakes
12 oz. uncooked linguine pasta
15-18 basil leaves, chiffonade cut, divided
4 oz. cream cheese
1 oz. parmesan cheese, grated
zest of 1/2 a lemon

1. place broth & tomatoes in a large, microwave safe bowl. microwave, covered, on high for 6-8 minutes, or until hot.

2. meanwhile, add bacon drippings to a large pot (that has a lid!) over medium-high heat. add shallot & red pepper flakes. saute for 2-3 minutes or until tender. add garlic and cook 10-20 seconds. add broth mixture, pasta, & half the cooked bacon. simmer, covered, 9-10 minutes or until pasta is almost cooked, but still firm... al dente! stir occasionally.

3. remove skillet from heat. add cream cheese, lemon zest, & half the basil. cover & let stand for 5 minutes or until pasta is tender & sauce is thickened.

4. serve with remaining bacon, grated parmesan, & basil as garnish.

in other news,
the water filter in our garage fridge broke...
and there was water everywhere.

luckily, it didn't happen inside!

  2. thanks, lisa! i think the new look is very "springy"... and i'm quite desperate for spring! :)

    the pasta was AWESOME. really good leftovers, too. i highly recommend it! plus, the fact that it's a one-pot meal makes it even better!

  3. That looks delicious! We have a big container (1 lb) of prosciutto we got from Sam's Club that I've been using in all sorts of interesting ways too--instead of bacon with some soft boiled eggs, cut up and served in salads. Tonight I'm wrapping shrimp with it and serving it over pasta :)
