apple cinnamon oatmeal bread

hello, sweet friends.
thanks for sticking with me while i was in my rut.
:)

i'm back now,
& better than ever.
all i can say is:
thank goodness it's almost march.
thank goodness i only have 2 midterms left.
thank goodness i have an amazing family
{who gets me through}.
thank goodness i have you. :)
& thank goodness i have disney world.

that's right...
my mom surprised me with a trip in may.
i'm so excited!
not just because disney is my favorite place on earth,
but because i get to spend time with my mom.
yay!

now, on to the good stuff:

apple cinnamon oatmeal bread


1/4 c butter, softened
3/4 c brown sugar
2 eggs
1/2 c water
1 3/4 c applesauce
1 c all purpose flour
1/2 c wheat flour
1 1/2 c old fashioned oats
1/4 tsp salt
1 tsp baking powder
1 1/2 tsp cinnamon
1/8 tsp nutmeg
1-2 Tbs brown sugar, for sprinkling

1. preheat oven to 350 f.

2. cream together the butter & sugar. add eggs, water & applesauce.

3. to the creamed mixture, add the oats, flour, cinnamon, salt, baking powder & nutmeg.

4. pour into greased bundt pan or 2 loaf pans.

5. sprinkle the brown sugar over the top of the batter.

6. bake for 45-60 minutes or until a toothpick comes out clean.

7. cool 5 minutes in the pan, then remove to a wire cooling rack. cool completely before slicing.

    Okay I'm in on this recipe, but do you think I can sub regular flour for the wheat flour, which I don't have on hand? Hmmmm. Looks yummy!
