i've had a hankerin' for some lavender cupcakes for awhile.
i finally decided to make them...
and got a little heavy handed with the lavender.
they were good, though.
i'll give you the modified recipe.
(with just a hint of lavender!)
lavender cupcakes with honey cream cheese frosting
yield 12 cupcakes
for the cupcakes:
1 c sugar
1/2 c butter
2 tsp vanilla extract
1 1/2 c all purpose flour
1 3/4 tsp baking powder
1/2 c milk
1 Tbs orange zest
1 Tbs lavender
1. preheat oven to 350 f. line a cupcake pan with paper/foil liners.
2. in a medium bowl, cream together the sugar and butter. beat in the eggs, one at a time, then stir in the vanilla. combine flour and baking powder, add to the creamed mixture and mix well. stir in the milk until the batter is smooth. mix in orange zest and lavender. fill cupcake tins 1/2 - 3/4 full.
3. bake 20 - 25 minutes.
for the frosting:
16 oz. cream cheese, softened
1 c honey
*i was lucky and had homemade from my brothers in law. yay, them!
2-3 c powdered sugar
1/2 tsp salt
1. whip cream cheese and honey until smooth. add salt. slowly add powdered sugar until taste / consistency is to your liking!
